Little things about me !
I was born in Hyeres, France, but raised on the flavors of Piémont — the region in northern Italy my family calls home. Food wasn’t something we talked about in my house. It was something we lived.
I spent six years training at culinary school in France before taking my craft across Europe and the United States — working in Italian kitchens, French ones, and eventually finding my way to Texas, and then to Kauai. Somewhere between the Alps and the Pacific, I found the place that felt like mine.
Along the way, I had the privilege of serving as personal chef to Carlos & Cindy Santana — nine months of private cooking for people who understand that creativity, passion, and discipline are the same whether you’re in a kitchen or on a stage.
At Ciao Tony, everything on the table starts with intention.
Some of our charcuterie is made in-house — bresaola, pipikaula, porchetta, — using meat from local Kauai ranchers.
The vegetables come from farmers I know by name.
The recipes come from somewhere deeper.
My grandfather taught me that the most meaningful things you can build are the ones you pour yourself into completely. He showed me what it looks like to work hard not for recognition, but because the work itself matters. I lost him recently, but I carry him in every plate I make.
He was a very creative human, cheffing his way straight into our memories.
This place is truly a tribute for him. And for everyone who takes a bite of Our food.
A simple way of perduring our family Love for food
And the beautifulness of sharing it with others.
The name Ciao Tony carries that story with it.
In Italy, “ciao” means both hello and goodbye — much like “aloha” here in Hawaii.
Growing up, it was how we greeted one another, and how we parted ways at the end of a meal.
It was simple, familiar, and full of warmth.
Choosing the name Ciao Tony is my tribute to my family, my roots, and especially to my grandfather.
Every time someone walks through our doors, I want them to feel that same sense of welcome and
belonging.
Whether you’re here for the first time or you’ve become a regular,
you’re always welcome at our table.
